Another Bartley Success!

I so enjoyed Colleen Bartley and John Pateman's Kid's Choice cookbook (as do all the little people in my life) that I was
thrilled to find that Ms. Bartley has written another for adults. The layout is fantastic and easy to follow. I really appreciate
the "chef's secret" tips as I am a novice cook and need all the help I can get. On the whole the ingredients are things that
one would have on hand (no trips to the grocery store mispronouncing a French sounding ingredient as the produce boy stares
at you as though you have two heads-it always turns out to be parsley anyway). There isn't a recipe I've tried that hasn't
turned out wonderfully and tasted fabulous. The salmon strudel is to die for and the peanut butter cookies never last a day
around here. All this being said I appreciate the low sugar, low fat as I am a big advocate of cutting sugar out of our diets.
This cookbook makes that an easy delicious way to achieve that goal.

My husband and I being new diabetics and having an already extensive collection of cookbooks we were skeptical that there
would be a cookbook we could fall in love with. This cookbook provides great information on some of the basics of diabetes
as well as wonderful recipes that everyone will like. There has not been one recipe we have tried that we did not like.
It's a change from the ordinary plain baked chicken that were were used to. Now we have a fabulous collection of chicken
recipes that make every dinner seem extraordinary instead of hearing "we're having chicken, again!"

Early stage diabetes can be managed easily with a disciplined
approach consisting of diet control and daily exercise. The
authors point out that an increase in blood glucose damages
nerves. In addition, the BMI or Body Mass Index is a good
indicator of the optimal weight loss objective to achieve for
dieters. The plasma/glucose ratio should be well under 126 after
8 hours of fasting.
The book identifies optimal foods for dieters and persons
desiring to control sugar. These foods are as follows:
- low glycemic index foods are all bran, lentils, nuts, soy,
yogurt, most fruits and veggies, beans, brown rice, pita bread
- red grapes, celery, green tea, berries, bulk, soy and flaxseed
- Omega 3 fats reduce inflammation
- Vitamin Biotin,Ca., Mg., B1 , 3, 6, 12,Folate,A,C,E, Se.
The acquisition would be perfect for a wide constituency of
health professionals and dieters everywhere. It is a solid
value for the price charged.

My alternative care physican, Dr. Maulfair (who wrote a blurb about the Lynette Hall on the back cover of this book) diagnosed
me with Candida. He recommended this book to me and I am now Candida free thanks to the delicious recipes Lynette has created.
I think it's wonderful that a doctor points his patients to getting to the root of a problem nutrionally. Thank you Lynette
and Dr. Maulfair!

I grew up in a southern country home where Sweet things where a part of every meal. Probably why I am diabetic. JoAnna Lund
won me over with her book," Cooking Healthy With A Man In Mind" where I found her "Banana Split Pie." This is a wonderful
and satisfying dessert. Her "Healthy Exchanges Diabetic Dessert Cookbook" is a must for diabetics. These desserts are satisfying
and a delight to prepare. Ms. Lund is a master at simplifying cooking using products you normally find in the cupboard and
around the kitchen. I am a big fan of her style of cooking. I recommend all diabetics consider this book.

I ran it by my doctor and dietician and got the thumbs up. I've given this book to two people already as gifts and they love

This is for people on the go. If you're absolutely exhausted at the end of a busy day and literally "braindead"...then this
book is for you! It's mainstream cooking at its best...using 6 ingredients or less per recipe. Whether you are diagnosed with
diabetes, or just want to eat better by taking control of your carbohydrates and your health...and ALWAYS in a hurry, then
you'll love this book. My goal was to develop recipes that would not tax the brain or require a lot of energy to prepare,
but still provide great tasting meals. So I intentionally created and tested every recipe when I was tired...yes, really tired
to be sure that they WERE really simple, really fast, really economical, and really easy to clean up! You CAN have normal
food and still be in control of your health. Since these meals are for everyone, you'll be eating the same food as your family
and friends. You won't feel singled out, you'll just feel extremely satisfied!! Try my Double Berry Pie...cook the filling
a few minutes in a skillet and slide a "flat baked" prepared pie crust on top...a 15-minute,quick-fix skillet fruit pie...and
the ingredients can always be kept on hand! So now you can enjoy eating...all over again! Have fun with it, I do!

My favorite low carb cookbook!

I have nearly every low carb cookbook known to man, but this one is definitly my favorite. It's not for those just starting
out with low carb (meaning, those on Induction levels) since Fiona is more liberal with fruits and certain vegetables that
are not permitted in the beginning. But once you've moved on to Ongoing Weight Loss phases and beyond (or if you're just low
carb in general) this will quickly become a favorite. Since I am nearly at goal weight I've had to lower calories significantly
and that is why this cookbook caters so perfectly to me. Although she does have some more "luxurious" dishes with rich ingredients,
most of the recipes utilize lean meats and good fats (like olive oil) over things like lard or butter. (I've found most other
low carb cookbooks use excessive fat, meaning a dish could have 700 calories or more at times). Some exceptionaly good recipes
include the roasted red bell pepper and feta cheese fritatta, the roasted chicken quarters with pear (not the exact title),
the mashed cauliflower, the turnip and rutabaga chips, the lamb chops with tomato sauce (not exact title) and her breakfast
shakes. I'm still working my way through this book, but I have yet to be disappointed...
