I am an author and a poet and during a leisure trip to Las Vegas, Nevada with my family, we were able to obtain a front row
seat at the Gladys Knight Show. It was awesome. What a display of great talent! Reading her book is fascinating. The historical
perspective of her story is amazing. She states how she believes diabetes eventually crept upon her, and why. However, she
has it under control. The ways in which she blends her songs into her treatment plan is humbling. For example, she uses the
heading in one section of the book, "Neither One Of Us Wants to Say Goodbye to the Cheeseburger," where she discusses fatty
foods and how to avoid fast foods. The pictures of her family are wonderful. Her philosophy of dealing with positive people,
exercising daily, and burning calories is a formula for success. The final section of the book deals with a variety of mouth-watering
dishes and recipes. They are all healthy with her special blend of spices, herbs, and juices, with a low fat touch. This
is an easy and relaxing book to read. It's a great treat to and for lowering one's blood sugar and staying healthy. I highly
recommend it!!!
Thank you Mrs. Knight

At Home With Gladys Knight is a wonderful, inspiring book. I bought this book for my parents who both have diabetes. After
years of trying to get them to follow doctor recommended diets it is a relief to have a book that inspires my parents to not
only care about their diet, but their physical fitness as well.
Mrs. Knight has created a quick and easy read that is full of motivation. This book gets 5 stars in the Murphy household.

Excellent resource for cuisines of Caribbean Latino population

Beyond Rice and Beans focuses on the Caribbean Latino population, composed of individuals from Puerto Rico, the Dominican
Republic, Cuba, and countries in Central and South America.
The book is written in both English and Spanish and begins with a simple overview of meal planning, discussing the differences between the types of carbohydrates and suggested serving sizes. Most helpful is a deeper explanation of the different cuisines of the Caribbean. Each section includes frequently asked questions, the most prominent foods included in each cuisine, and tips to reduce the fat and calories in many of the dishes highlighted.
The book also includes practice exercises to further understand the information discussed. The chapter titled "Putting Together Your Meal Plan" includes examples of how to individualize a meal plan by allowing the reader to participate in choosing what he or she already eats and incorporating it into a new meal plan.
The book is filled with helpful lists and tables of common foods eaten in the regions, utensils used in a Latin kitchen, and a practical list of what to do during holidays and special occasions. There are several chapters that described the fruits and vegetables of the Caribbean. The author describes the foods in great detail, giving pronunciation where applicable, providing some historical background about the food, and listing health tips as well as stories of when she lived in Cartagena, Columbia. The book includes a very personal touch, which makes it very easy to read, and the information is well researched and includes very practical information regarding the use of the foods and where to find them.
This is a wonderful book that provides excellent information regarding the many cuisines of the Caribbean Latino population for those who are already part of it or for those who want to learn more about it.

I realize I may be a bit prejudiced, being the niece of the author, but I found his book very easy to follow. It made a lot
of sense for anyone who needs to cut down on their sugar and eat healthy. The recipes are very tasty and one can see how
he changed the standard recipes into ones that a diabetic can safely eat. This can help anyone work with their own favorite
recipes to transform them into diabetic friendly dishes. But most importantly he gives you a guide to how to control your
blood sugar to enable you to not have to use as much, if any insulin. Many of my friends have this book and have raved about
how great the recipes and guides are. Some were not diabetic but just wanted to eat healthy and lose weight. It makes a
perfect gift for anyone who needs to watch their sugar.

I FOUND THIS BOOK TO BE EXCELLENT FOR THE JUST INFORMED DIABETIC WOMAN. SO MANY DOCTORS JUST TELL YOU THE NEWS, HAND YOU A
PRESCRIPTION AND YOU ARE ON YOUR OWN. I HAVE RECOMMENDED THIS BOOK TO MY PHARMACY AND HEALTH FOOD STORE, BOTH WHO SAY NEWLY
INFORMED DIABETICS COME IN AND SAY THEY HAVEN'T A CLUE OF WHAT TO DO NOW.

June Biermann and Barbara Toohey team up with Dr. Lois Jovanovic-Peterson to create the best question and answer book for
the diabetic female. The book is divided into three stages of life. Each stage is categorized into developments common
with the age group. There is even a special chapter about diabetes and pregnancy in the second life stage. Complications
are discussed, but not emphasized. Living life to the fullest is the goal. Type 2 diabetes is also discussed briefly.
The tone of the book is lighthearted and often funny. There are several antecdotes about life with diabetes and how to
answer some of the questions a person is asked by well meaning friends or family. This book is a must for both the diabetic
patient and her loved ones.

The recipes comprising the Easy Diabetic Meals provide easy-to-follow directions and ingredient amounts for both 2 and 4 servings,
feature easily-located and common ingredients, and lack the complexity of some diabetic cookbooks which require long preparation
times. The result is a set of complete 2-week menus for three different calorie levels and meals which embrace the concept
of appeal for the entire family, diabetic or not.

change is the title. I would call it Easy Healthy Meals For 2 or 4 Servings. I'm not even a diabetic. My eating habits have
improved and I am losing weight without dieting. Don't hesitate to purchase it.

This cookbook is printed in black and white, there are no pictures and the pages are a matte finish. So if you're cooking
and you splatter something on them...it's there to stay. Perhaps that's how you know which recipes to make again, LOL.
I really liked that each recipe had all the nutrition information. There are calorie counts, food exchanges, fat, carb and protein grams, etc. This cookbook is just not for diabetics. It's for anyone who wants good recipes and tasty dishes. I really liked the Italian Peasant Salad. I do not have diabetes, nobody in the family does...I just like good cookbooks and making new dishes. This is one for the record book.
The Toasted Almond Chicken Salad I am making using the left-over turkey from Thanksgiving instead. The cookbook also has a month of meals, it includes breakfast, lunch and dinner. With all the recipes included and which pages they can be found. What an awesome idea, I wonder why more cookbooks don't incorporate these little extras?
The chapters are divided into breakfast, lunch, dinners and speed meals. There are no dessert recipes for the obvious reason. And I won't make broccoli now without using oil infused with saffron. That was just delicious. All the food ingredients call for fresh, bottled sauces, bottled salad dressings, dried or fresh herbs. Basically items that can be purchased at a regular grocery store. Gotta appreciate that.
You won't be disappointed in this cookbook especially if you're not a diabetic. You definitely will not find flavorless food in this cookbook. Buy!

Each recipes is provided with a 'Shopping List' of ingredients required, cooking instructions, and 'Helpful Hints'. This new
edition features a section of 'speed meals' that can be prepared quickly, easily, and still produce healthy, hearty, tasty
dishes that will please any palate, satisfy any appetite, and conform to the dietary requirement of diabetics. The sample
menus provided offer dishes that range from Grilled Turkey Sausage with Mustard and Sweet Pickle Relish; Spicy Grilled Cheese
